Green Beans with Eggs, Chiles and Cilantro
Ingredients
- 1 lb. green beans, cut into 2” pieces
- 1 T. butter
- 1 T. olive oil
- 1 small onion, finely chopped
- 5 large eggs, lightly beaten
- Salt and black pepper to taste
- 1 c. chopped cilantro (if you do not like cilantro, use parsley)
- 2 T. chopped walnuts
- 1 T. minced garlic
- 2 small jalapenos, seeded and minced
- 2 small red chile, seeded and minced
- ½ t. dill seeds
Instructions
- In saucepan of boiling salted water, cook beans until tender, about 5 minutes. Drain and cool. Transfer to bowl.
- In large nonstick skillet, melt butter in the oil.
- Add onion and cook, stirring until softened.
- Add eggs and season. Cook over moderate heat, stir, until eggs are scrambled.
- Add eggs to beans.
- Stir in cilantro, walnuts, garlic, jalapeno, red chile and dill seeds. Season to taste.
