Greek Lover's Stuffed Tomatoes
Ingredients
- 6 (8-10 oz.) large, firm beefsteak tomatoes
- Salt, black pepper
- Zest of 1 lemon
- 2 T. fresh lemon juice
- 1 T. olive oil
- 1 T. honey
- 2 t. Dijon mustard
- 1 T. minced garlic
- 2 c. chopped fresh baby spinach, stems removed
- 1 c. cooked orzo pasta
- 1 c. crumbled feta, goat or bleu cheese
- ¼ c. chopped black olives
- ¼ c. chopped red onion
- ¼ c. minced fresh mint
- Lemon wedges
Instructions
- Slice tops off tomatoes and scrape out pulp (can discard or use for another time.)
- Season inside of tomato with salt and pepper.
- Whisk together zest, lemon juice, oil, honey, mustard and garlic.
- Season with salt and pepper.
- Toss spinach, orzo, cheese, olives, onion and mint with the vinaigrette.
- Taste for seasoning.
- Divide and stuff the tomatoes and serve with lemon wedges.
