Ingredients
  • 6 (8-10 oz.) large, firm beefsteak tomatoes
  • Salt, black pepper
  • Zest of 1 lemon
  • 2 T. fresh lemon juice
  • 1 T. olive oil
  • 1 T. honey
  • 2 t. Dijon mustard
  • 1 T. minced garlic
  • 2 c. chopped fresh baby spinach, stems removed
  • 1 c. cooked orzo pasta
  • 1 c. crumbled feta, goat or bleu cheese
  • ¼ c. chopped black olives
  • ¼ c. chopped red onion
  • ¼ c. minced fresh mint
  • Lemon wedges
Instructions
  1. Slice tops off tomatoes and scrape out pulp (can discard or use for another time.)
  2. Season inside of tomato with salt and pepper.
  3. Whisk together zest, lemon juice, oil, honey, mustard and garlic.
  4. Season with salt and pepper.
  5. Toss spinach, orzo, cheese, olives, onion and mint with the vinaigrette.
  6. Taste for seasoning.
  7. Divide and stuff the tomatoes and serve with lemon wedges.
