Ingredients
  • 4-6 kale leaves, stems removed
  • 1 T. canola oil
  • 2 medium red onions, cut into ½” thick slices
  • Kosher salt, black pepper
  • 1 T. red wine vinegar
  • 8 slices multigrain bread or your favorite
  • PAM
  • ¼ c. finely grated parmesan cheese, divided
  • 1 c. shredded raciette cheese
Instructions
  1. Preheat oven 300.
  2. Bring small pot of water to boil. Add kale. Remove from heat and let stand 3 minutes or until kale is bright green.
  3. Drain, rinse kale under cold water until cold. Pat leaves dry.
  4. Heat a skillet over medium heat and drizzle oil and swirl.
  5. Add onion and season with salt and pepper. Cook 8-10 minutes or until tender and browned. Stir frequently.
  6. Remove from heat.
  7. Stir in vinegar, tossing to coat.
  8. Coarsely chop onion.
  9. Heat large nonstick skillet over medium heat.
  10. Spray 1 side of each slice of bread with PAM.
  11. Working 2 slices at a time, arrange bread in pan, sprayed side down.
  12. Cook until bread starts to brown.
  13. Sprinkle 1 T. parmesan on 1 bread slice in pan.
  14. Top with kale leaf, ¼ of onion mixture and about ¼ c. raclette.
  15. Top with other toasted bread slice.
  16. Transfer sandwich to baking sheet.
  17. Repeat with remaining slices of bread.
  18. Bake sandwiches for 5 minutes or until cheese melts.
Notes
*****Raclette is a semi-hard pungent cow’s milk cheese from Switzerland which is usually fashioned into a wheel. It is most commonly used for melting.
