Garbanzo Bean Relish
Ingredients
  • ⅓ c. red wine vinegar
  • 4 T. balsamic vinegar
  • ¼ c. extra-virgin olive oil
  • Salt, black pepper, garlic powder
  • 2 bunches, chopped green onions
  • 1 medium red onion, chopped
  • 1 red bell pepper, chopped or ¼ c. roasted red peppers, drained
  • 3 T. honey
  • 2-3 (12-oz.) cans garbanzo beans, drained (chick peas)
Instructions
  1. Mix all the ingredients except beans in a bowl or jar.
  2. Pour over the beans and marinade for at least 4 hours or overnite. Will keep for 1 week.
  3. Season to taste if needed.
  4. Serve cold or room temperature.
Notes
*****You can add a variety of beans or do one selection of another bean such as white beans, pinto beans or black beans.
