Fudgy Greek Yogurt Frozen Pops
Ingredients
- 8 oz. semisweet chocolate chips
- 1 ½ c. milk (skim, whole or 2 percent)
- ⅓ c. unsweetened cocoa powder
- 2-3 T. sugar
- 1 t. vanilla
- ¼ t. salt
- 1 c. Greek yogurt (regular or 2 percent)
Instructions
- Put chocolate chips in a glass mixing bowl and set aside.
- Combine milk, cocoa powder, sugar, vanilla and salt in saucepan over medium heat.
- Whisk constantly until cocoa is dissolved and mixture comes to a simmer.
- Remove from heat and pour mixture over the chips.
- Let stand 5-8 minutes, then whisk gently until all chocolate is melted.
- Whisk in yogurt until smooth and blended, then cool completely.
- Divide mixture evenly among 8 popsicle molds.
- Place in freezer and leave until solid.
- Just before serving, briefly run molds under hot water to release the pops.
Notes
*****This will keep for about 1 month. You can experiment with different flavors of Greek yogurt and add pureed fruit or flavorings.
