Frickle Pickle
Ingredients
- 1 (16-oz.) jar sliced dill pickles
- 1 c. buttermilk
- 3 T. Tabasco
- 1 c. flour
- 1 c. yellow cornmeal
- 2 T. Creole seasoning or a blend of salt, red/black pepper, garlic powder
- 4 c. canola or peanut oil
- Salt
Instructions
- Drain pickles in a colander, then spread them on paper towels to drain completely.
- Combine buttermilk and Tabasco in a bowl.
- In another bowl, combine flour, cornmeal and creole seasoning.
- Heat oil in a medium heavy duty pot to 350.
- Submerge pickles in buttermilk mixture.
- Then dip in flour mixture, tossing to evenly coat.
- Shake in strainer to remove excess batter.
- Add to oil in batches but do not overcrowd.
- Fry and turn to cook until golden brown and crisp. About 2 minutes.
- Drain on paper towels and season with more Creole seasoning and salt to taste.
- Serve hot.
