Fresh Herbed Ricotta Tomato Salad
Ingredients
- 2 T. extra virgin olive oil
- 1 T. good quality balsamic vinegar
- ½ t. kosher salt
- ½ t. fresh black pepper
- 2 T. minced garlic
- ⅓ c. part-skim ricotta cheese
- 3 T. fresh minced basil
- 2 lbs. fresh heirloom or Creole tomatoes, cut crosswise into ½” slices
- ¼ c. torn fresh basil leaves
- Salt, black pepper
Instructions
- Combine the oil, vinegar, ½ t. salt, ½ t. pepper and garlic in a bowl.
- Stir with a whisk.
- In another bowl, combine ricotta and 3 T. minced basil, stirring with a whisk.
- Arrange tomato slices on a platter.
- Sprinkle with salt and pepper.
- Drizzle the olive oil mixture over the tomatoes.
- Place a dollop of the ricotta mixture on the center of each tomato slice.
- Sprinkle the torn basil leaves across the sliced tomatoes.
