Ingredients
- 6 large egg yolks
- ½ c. sugar
- 1 c. whole milk
- 1 c. heavy cream
- ½ vanilla bean, split lengthwise and seeds scraped out
- 1 oz. Bailey’s Irish Cream
- 1 oz. Irish whiskey
- Dash of chocolate bitters
- 2 oz. Guinness stout
Instructions
- Make ice cream: Whisk yolks and sugar in large bowl until pale.
- Bring milk, heavy cream and vanilla pod and seeds to a simmer in a saucepan.
- Slowly whisk the hot liquid into the egg mixture. Strain through a fine mesh sieve into a clean bowl and set that bowl in a bowl of ice water.
- Add the Irish cream and whiskey and stir until cool.
- Transfer to the refrigerator and chill for 4-6 hours. Freeze in an ice cream maker according to directions.
- To make each drink: Put a scoop of ice cream in glass.
- Add the bitters and top off with the Guinness.
Notes
*****If you do not want to make the ice cream, just take softened vanilla ice cream and fold in the Irish cream and whiskey and freeze until firm.
