Fettuccine with Ham and Peas
Ingredients
- 1 T. minced garlic
- 2 shallots, finely chopped
- 2-3 T. good olive oil
- ½ lb. thinly sliced good quality ham, shredded
- 1 c. frozen green peas, thawed
- 12 oz. fettuccine
- 3 T. olive oil
- ½ c. good olive oil
- 1 c. freshly grated parmesan cheese
- 1 (8-oz.) Greek yogurt or sour cream
- Salt and pepper to taste
Instructions
- In large skillet, heat 2-3 T. of the olive oil. Saute the garlic and shallots.
- Stir in the ham and peas. Cook for 3-5 minutes. Remove from heat, cover and set aside.
- Cook fettuccine according to package directions in salted water that has 3 T. of olive oil added. Prevents pasta from sticking. Drain well. Place in large serving bowl.
- Add the ½ c. olive oil to pasta. Mix well.
- Add the parmesan and yogurt. Mix well to coat all of the pasta.
- Gently fold in the ham and pea mixture. Taste for seasoning. Serve.
