Ingredients
  • 1 (10-oz.) pkg. frozen chopped spinach, thawed and well drained
  • 1 bunch fresh chopped parsley
  • 1 c. Italian seasoned breadcrumbs
  • ¼ c. butter, melted
  • ¼ c. grated fresh parmesan cheese
  • 2 large eggs, lightly beaten
  • 1 T. minced garlic
  • Sea salt, red/black pepper, garlic powder
  • Tabasco to taste
  • 2 dozen medium sized fresh oysters, drained (need the shells or ramekins)
  • Paprika
Instructions
  1. Combine the spinach, parsley, breadcrumbs, butter, cheese, eggs, garlic and the seasonings. Also add Tabasco to taste.
  2. Place the shells on a baking sheet.
  3. Place an oyster in the hull of the shell.
  4. Spoon the spinach mixture onto the oysters.
  5. You can sprinkle a little extra bread crumbs or cheese on top. Sprinkle with a little paprika.
  6. Bake at 350 for 12-15 minutes, then put under BROIL about 6 inches from the heat and heat another 2-3 minutes.
