Family Oysters Rockerfeller
Ingredients
- 1 (10-oz.) pkg. frozen chopped spinach, thawed and well drained
- 1 bunch fresh chopped parsley
- 1 c. Italian seasoned breadcrumbs
- ¼ c. butter, melted
- ¼ c. grated fresh parmesan cheese
- 2 large eggs, lightly beaten
- 1 T. minced garlic
- Sea salt, red/black pepper, garlic powder
- Tabasco to taste
- 2 dozen medium sized fresh oysters, drained (need the shells or ramekins)
- Paprika
Instructions
- Combine the spinach, parsley, breadcrumbs, butter, cheese, eggs, garlic and the seasonings. Also add Tabasco to taste.
- Place the shells on a baking sheet.
- Place an oyster in the hull of the shell.
- Spoon the spinach mixture onto the oysters.
- You can sprinkle a little extra bread crumbs or cheese on top. Sprinkle with a little paprika.
- Bake at 350 for 12-15 minutes, then put under BROIL about 6 inches from the heat and heat another 2-3 minutes.
