Fabulous Turkey Breast
Ingredients
- 1 (14-16 lb.) fresh turkey
- 1 T. dry rubbed sage
- ½ t. garlic powder
- ½ t. onion powder
- 1 t. salt
- 1 t. pepper
- 1 t. oregano
- 1 t. thyme
- Zest of 1 lemon
- 1 T. canola oil
Instructions
- Remove legs and wings from turkey or have butcher do it. (You can save them for stock.)
- Put turkey breast in large pot and when brine is completely cooled, pour over turkey and place in refrigerator for 12 hours.
- Rinse under cool water for 5 minutes and drain and pat dry with paper towels.
- In small bowl, combine the dried spices and lemon zest.
- Rub turkey with canola oil, lightly sprinkle rub on turkey and place extra rub in cavity. Cover loosely and refrigerate for 4 hours.
- Remove from refrigerator and let rest on counter for 15 minutes.
- Preheat oven 425 while turkey is resting.
- In large, deep baking pan, fitted with a rack, place turkey breast side down and roast for 35 minutes.
- Carefully turn turkey over and reduce heat to 375 and continue to roast for 1 hour and 45 minutes or until deepest part of breast reads 170 degrees. Check bird every 15 minutes after the first hour has passed.
- Take out of oven, loosely tent with foil, rest in pan 10 minutes. Carve and serve.

FABULOUS TURKEY BREAST - BRINE:
Ingredients
- 6 qts. Water
- 8 c. ice cubes
- 1 c. kosher salt
- ⅓ c. brown sugar
- ½ c. molasses
- 7 fresh sage leaves
- 2 T. black peppercorns
Instructions
- In large stock pot, combine 3 qts. Water, 1 c. salt, brown sugar, molasses, sage, and peppercorns. Heat until salt dissolves, remove from heat. Add 3 qts. cool water and 8 c. ice.
