Easy Oyster Soup
Ingredients
- 3 T. canola oil
- 3 T. flour
- 1 large Vidalia onion, chopped
- 4 c. warm whole milk
- 4-5 dozen fresh shucked oysters, save liquid
- ⅓ c. chopped fresh parsley
- 3 T. butter
- Kosher salt, black pepper
- Chopped green onions, garnish
Instructions
- In large Dutch oven, heat oil. Add flour and cook until a light brown roux is formed, about 3-4 minutes.
- Add onion and cook until tender.
- In a bowl, combine the warmed milk and reserved oyster liquid.
- Reduce heat to Dutch oven to medium, gradually add milk to the onion mixture, stirring constantly.
- Mixture will thicken slightly.
- Bring mixture to a low boil, reduce heat to low and simmer for 2-3 minutes.
- Add oysters, parsley, butter and season to taste.
- Simmer until oysters start to curl on edges, about 3-5 minutes.
- Remove from heat. Taste for additional seasoning if needed.
- Garnish with green onions and serve with a nice hot bread or crackers.
