Easy Crock Pot Chicken Fajitas
Ingredients
- 1-2 lbs. boneless chicken breasts or fingers, cut into strips
- 1 large Vidalia onion, cut into thin slices, separated
- 3 T. lime juice
- 2 T. minced garlic
- 1 t. ground cumin
- 1 t. chili powder
- Salt and black pepper, to taste
- 1 green bell pepper, thinly sliced
- 6-8 warm whole wheat or favorite tortillas
- Shredded sharp cheddar or Monterey Jack, or favorite cheese
- Salsa
- Sour cream
- Shredded lettuce
- Sliced fresh avocado
- Sliced jalapenos
Instructions
- Place chicken, onions and bell peppers into crock pot.
- Sprinkle all the seasonings all over the items in crock pot. Mix well.
- Add lime juice. Mix well.
- Cook on LOW for 4-6 hours.
- Serve in warm tortillas with the optional garnishes of cheese, salsa, sour cream, lettuce, avocado and jalapenos.
