Delicious Peach Bars

Ingredients
- 1 c. flour
- 1 c. quick cooking oats
- ½ c. packed light brown sugar
- ¼ t. salt
- ¼ t. baking soda
- ½ c. cold butter, cubed
- ¾ c. Mitcham Farms’ Peach Jam or Preserves (or your favorite jam/preserves)
- ½ c. chopped almonds, walnuts or pecans or mixture of both
- ½ c. shredded coconut, optional
Instructions
- Lightly grease 8” square baking pan.
- Preheat oven 350.
- In large mixing bowl, combine flour, oats, sugar, salt, baking soda, nuts and coconut.
- Using a pastry cutter or your fingers, cut butter until butter pieces resemble coarse sand.
- Divide mixture in half.
- Press ½ of oat mixture into prepared pan.
- Spread the preserves across the top of mixture.
- Top with remaining oat mixture.
- Bake for 35-45 minutes or until golden brown.
- Remove from oven and cool on wire rack.
- Cut into 16 bars.
- Serve with cool whip or ice cream or plain.
- Store in airtight container in cool dry place.
Notes
*****Freezes well. I tried this with fresh fruit. It works but I think it is a little more runny. You could possibly coat the fruit with a little flour or cornstarch to thicken it up.
