Ingredients
  • 1 c. flour
  • 1 c. quick cooking oats
  • ½ c. packed light brown sugar
  • ¼ t. salt
  • ¼ t. baking soda
  • ½ c. cold butter, cubed
  • ¾ c. Mitcham Farms’ Peach Jam or Preserves (or your favorite jam/preserves)
  • ½ c. chopped almonds, walnuts or pecans or mixture of both
  • ½ c. shredded coconut, optional
Instructions
  1. Lightly grease 8” square baking pan.
  2. Preheat oven 350.
  3. In large mixing bowl, combine flour, oats, sugar, salt, baking soda, nuts and coconut.
  4. Using a pastry cutter or your fingers, cut butter until butter pieces resemble coarse sand.
  5. Divide mixture in half.
  6. Press ½ of oat mixture into prepared pan.
  7. Spread the preserves across the top of mixture.
  8. Top with remaining oat mixture.
  9. Bake for 35-45 minutes or until golden brown.
  10. Remove from oven and cool on wire rack.
  11. Cut into 16 bars.
  12. Serve with cool whip or ice cream or plain.
  13. Store in airtight container in cool dry place.
Notes
*****Freezes well. I tried this with fresh fruit. It works but I think it is a little more runny. You could possibly coat the fruit with a little flour or cornstarch to thicken it up.
