Delicious Oyster Stew
Ingredients
- ½ c. butter
- ½ c. chopped green onion
- ½ c. minced shallot
- ¼ c. minced celery
- ¼ c. flour
- 2 c. whole milk
- 1 pint oysters with the liquid
- Salt, white pepper
- Tabasco
- Chopped fresh parsley, garnish
Instructions
- In a medium Dutch oven, melt butter.
- Add green onion, shallot and celery. Cook until soft.
- Sprinkle in flour and stir constantly and cook for about 5 minutes.
- Stir in milk, slowly.
- Bring to a simmer (DO NOT BOIL).
- Cook, stirring often until thickened.
- Stir in oysters and the liquor. Cook until oysters are cooked through, about 5-8 minutes.
- Add salt, white pepper and Tabasco to taste.
- Garnish with parsley.
