Delicious Blueberry Cobbler
Ingredients
- 5-6 c. fresh blueberries
- 1 c. plus 2 t. flour
- 5 T. plus 2 t. sugar
- 1 t. kirsch
- ½ t. finely grated lemon zest
- 2 t. baking powder
- ¼ t. salt
- 5 T. butter
- ½ c. plus 1 T. milk
- Vanilla ice cream
Instructions
- Preheat oven 375.
- Toss berries with 2 t. flour, 4 T. sugar, kirsch and zest.
- Pour mixture into 12x9” oval baking pan.
- Mix remaining 1 c. flour with 1 T. sugar, baking powder and salt.
- Cut in butter until mixture resembles coarse meal.
- Stir in ½ c. milk to make a very soft dough.
- Drop dough by spoonfuls on top of berry mixture.
- Dampen your hand with half of remaining milk and spread out the dough to cover most of the fruit.
- Brush top of dough with rest of milk.
- Sprinkle the surface with remaining 2 t. sugar.
- Bake cobbler for 35 minutes, or until golden brown and berries are bubbling.
- Serve warm with vanilla ice cream.
