Crock Pot Turkey and Black Bean Soup
Ingredients
- 2 large red onions, halved
- ¼ c. olive oil
- 4 carrots, cut into large chunks
- 3 T. minced garlic
- 1 T. flour
- 1 lb. dried black beans, rinsed
- 2 lbs. smoked turkey drumstick
- 3 T. pickling spice, tied in cheesecloth
- 1 t. red pepper flakes
- Kosher salt, black pepper
- ½ c. chopped fresh cilantro or parsley
- Sour cream, lime wedges, garnish
Instructions
- Set aside ½ onion and chop rest.
- Heat olive oil in large skillet over medium heat.
- Add chopped onions, carrots and garlic. Sprinkle with flour and cook, stirring until slightly browned.
- Add 2 T. water and scrape up any browned bits from the pan.
- Transfer veggies and cooking liquid to a crock pot.
- Add beans, drumstick, pickling spice packet, red pepper flakes and 8 cups of water.
- Cover and cook on LOW, 6 hours.
- Remove drumstick and shred meat. Keep warm.
- Remove 2 c. of beans, then, partially puree the soup in pot with immersion blender.
- Return beans and turkey meat to soup.
- Season to taste.
- Mince the reserved ½ onion.
- Top soup with cilantro and minced onion.
- Serve with sour cream and lime wedge.
