CRISPY ZUCCHNI SLAW
Ingredients
- 4-6 zucchini (need about 8 cups), julienne
- 1 T. kosher salt
- 6 green onions, sliced on bias
- ¼ c. chopped fresh parsley
- 3 T. chopped fresh mint
- 1 T. minced fresh oregano
- Zest of 1 lemon
- ¼ c. extra-virgin olive oil
- 3 T. fresh lemon juice
- Salt, black pepper
- Shaved pecorino
Instructions
- Julienne the zucchini, omitting the seeded area. Then cut the strips crosswise, for easier eating.
- Toss zucchini with kosher salt and let sit in colander to drain excess liquid, about 30 minutes.
- Transfer to salad spinner and take out as much liquid as possible. You can also place in dish towel and twist the towel to squeeze out the liquid.
- Place zucchini in bowl.
- Add green onions, parsley, mint, oregano and zest.
- Whisk together oil and lemon juice. Season with salt and pepper.
- Pour over slaw.
- Toss slaw and top with pecorino.
