Creole Lima Beans
Ingredients
- PAM
- Olive oil
- ½ c. chopped celery
- ½ c. chopped green pepper
- ½ c. chopped onion
- 1 (16-oz.) pkg. fresh or frozen baby lima beans, thawed
- 1 c. diced tomato
- 1 c. hot spicy hot vegetable juice cocktail or bloody mary mix
- 1 t. crushed red pepper
- Salt and black pepper to taste
Instructions
- Coat large skillet with PAM and then drizzle bottom with olive oil.
- Over medium-high heat, add celery, onion and pepper and sauté until tender.
- Add beans and remaining ingredients. Bring to a boil and cover and reduce heat and simmer for 12-15 minutes or until beans are tender. Taste for seasoning.
