Ingredients
  • SHORTBREAD:
  • 3 ½ oz. butter
  • 3 T. sugar
  • 2 oz. corn flour, sifted
  • 3 oz. plain flour, sifted
  • CARAMEL FILLING:
  • 4 ½ oz. butter
  • 3 oz. brown sugar
  • 2 T. honey
  • 1 (14-oz.) can sweetened condensed milk
  • 1 t. vanilla
  • CHOCOLATE TOPPING:
  • 8 oz. chocolate, melted
Instructions
  1. Preheat oven 350.
  2. SHORTBREAD: Place butter and sugar in bowl and beat until light and fluffy.
  3. Mix in corn flour and plain flour, turn onto a lightly floured surface and knead briefly.
  4. Press into a greased and lined 7x11: shallow cake tin and bake 25 minutes, or until firm.
  5. FILLING: Place butter, brown sugar and honey in saucepan and cook over medium heat, stirring constantly until sugar melts and ingredients are combined.
  6. Bring to boil and simmer 5-7 minutes.
  7. Beat in milk and vanilla.
  8. Pour filling over base and bake for 20 minutes longer.
  9. Set aside and cool completely.
  10. Spread melted chocolate over the filling and set aside until firm, then cut into squares.
  11. Store at room temperature in airtight container.
