Country Squash Bake
Ingredients
- 10 large yellow squash, cut into pieces
- 1 onion, chopped
- 1 (8-oz.) carton of sour cream or Greek yogurt
- 1 t. salt
- 1 t. dried basil
- 1 t. red pepper flakes
- 1 c. soft whole wheat breadcrumbs
- 1 c. shredded cheddar cheese
- ¼ c. butter, melted
- Paprika
Instructions
- Cook squash and onion in boiling salted water 8-10 minutes or until tender.
- Drain and mash.
- Combine squash, sour cream and the next 3 ingredients. Stir well.
- Spoon the squash mixture into greased 2 qt. casserole dish.
- Combine breadcrumbs, cheese and butter. Mix well.
- Sprinkle over the squash mixture. Sprinkle with paprika.
- Bake, uncovered at 300 for 25-30 minutes or until thoroughly heated.
