Chocolate Chip and Banana Muffins
Ingredients
- 1 ½ c. sugar
- 1 ½ sticks butter, melted
- 2 c. mashed overripe bananas (this will be about 6)
- 3 large eggs
- 2 ¾ c. flour
- 2 ½ t. baking soda
- 1 t. salt
- 1 c. mini chocolate chips
Instructions
- Preheat oven 350. Line two 12-c. muffin tins with paper or foil liners.
- In large bowl, combine sugar, melted butter, bananas and eggs. Mix well.
- In medium bowl, whisk flour with baking soda and salt.
- Add dry ingredients to wet ingredients and whisk until batter is evenly moistened.
- Stir in chips.
- Spoon batter into prepared muffin cups.
- Bake for 25-28 minutes, until toothpick inserted in center comes out with few moist crumbs.
- Let muffins cool for 10 minutes before turning them out onto a rack to cool completely.
Notes
*****Muffins can be wrapped in plastic and placed in ziplock bags and frozen for 1 month. Let thaw and toast in 350 oven.
