Ingredients
  • 6 ears of fresh corn, cut from the cob
  • 3 T. butter
  • 1 T. chipotle chile in adobo sauce, finely chopped
  • 2 t. ground cumin
  • 1 T. lemon zest
  • Kosher salt, fresh black pepper
  • 3 T. minced fresh chives or parsley
Instructions
  1. In a large skillet, melt the butter.
  2. Add the chipotle chile, zest and cumin. Saute for about 1 minute.
  3. Add the cut corn and cook until tender crisp, about 2-3 minutes.
  4. Season with salt and pepper to taste.
  5. Garnish with chives or parsley.
Notes
*****Great to stuff peppers or garnish stuffed potatoes, mixed in tomato soup or other soups, garnish for salads. It is pretty good on most things.
