Ingredients
  • 3 large Vidalia onions, sliced ½” thick
  • ½ c. apple cider
  • 2 T. minced garlic
  • 1 t. dried thyme, crushed
  • Fresh black pepper, red pepper
  • 8 cooked smoked chicken or turkey bratwurst
  • ¼ c. buttermilk
  • 2 T. chopped fresh parsley
  • 1 T. Miracle whip or mayo
  • ¼ t. caraway seeds, crushed
  • 2 c. packaged shredded broccoli slaw mix
  • 8 whole grain frankfurter buns, split and toasted
Instructions
  1. In a 4 qt. slow cooker combine onions, apple cider, garlic, thyme and black pepper (depending on how spicy you like it, but at least 1 t.).
  2. Arrange bratwurst on top of onion mixture. Cover and cook on LOW for 5-6 hours or on HIGH for 2 ½- 3 hours.
  3. In a bowl, combine buttermilk, parsley, mayo, caraway seeds and red pepper. Stir in broccoli slaw. Cover and chill until ready to serve.
  4. Remove bratwurst from cooker. Using slotted spoon, remove onions, draining well.
  5. Discard cooking liquid.
  6. To serve: Spoon onions onto bottom of buns. Add bratwurst and the broccoli slaw on top. Place top of bun on.
