Chicken Bratwurst with Broccoli Slaw
Ingredients
- 3 large Vidalia onions, sliced ½” thick
- ½ c. apple cider
- 2 T. minced garlic
- 1 t. dried thyme, crushed
- Fresh black pepper, red pepper
- 8 cooked smoked chicken or turkey bratwurst
- ¼ c. buttermilk
- 2 T. chopped fresh parsley
- 1 T. Miracle whip or mayo
- ¼ t. caraway seeds, crushed
- 2 c. packaged shredded broccoli slaw mix
- 8 whole grain frankfurter buns, split and toasted
Instructions
- In a 4 qt. slow cooker combine onions, apple cider, garlic, thyme and black pepper (depending on how spicy you like it, but at least 1 t.).
- Arrange bratwurst on top of onion mixture. Cover and cook on LOW for 5-6 hours or on HIGH for 2 ½- 3 hours.
- In a bowl, combine buttermilk, parsley, mayo, caraway seeds and red pepper. Stir in broccoli slaw. Cover and chill until ready to serve.
- Remove bratwurst from cooker. Using slotted spoon, remove onions, draining well.
- Discard cooking liquid.
- To serve: Spoon onions onto bottom of buns. Add bratwurst and the broccoli slaw on top. Place top of bun on.
