Cheesy Spinach and Bacon Dip
Ingredients
- 1 (10-oz.) pkg. frozen chopped spinach, thawed and drained
- 1 lb. Velveeta cheese, cut into cubes
- 4 oz. cream cheese, cubed
- 1 (10-oz.) can RO’TEL diced tomatoes and green chilies, undrained
- 8 slices of bacon, cooked and crumbled
Instructions
- Mix all ingredients in a microwaveable bowl on HIGH for 5 minutes or until cheese is completely melted and mixture is well blended. Stir after 2 minutes.
- Serve with tortilla chips or crackers or veggies.
Notes
*****To keep warm, serve in a SLOW COOKER set on LOW. Stir every now and then to keep from burning on the bottom.
The leftovers can be served on potatoes or pasta. You can add meat or chicken or seafood to blend in and serve on potatoes or with pasta.
