Cheesy Broccoli Soup
Ingredients
- ¼ c. olive oil
- 1 large Vidalia onion, finely chopped
- 3 celery stalks, finely chopped
- 2 c. chicken broth
- 2 c. half and half
- 2 c. water
- 1 lb. Yukon gold or russet potatoes, peeled and chopped
- 1 lb. yams, peeled and chopped
- 2 bay leaves
- Kosher salt, black pepper
- 2 c. fresh chopped broccoli florets
- 1 ½ c. shredded sharp cheddar cheese
- Croutons, for topping, optional
Instructions
- Heat olive oil in large pot over medium heat.
- Add onion and celery and cook until soft, stirring occasionally.
- Add broth, half and half, all potatoes, bay leaves, water, 1 t. salt, 1 t. pepper. Bring to a boil.
- Reduce heat to low and simmer until potatoes are tender.
- Meanwhile, place broccoli in microwave safe bowl, add 3 T. water and season with salt.
- Cover with plastic wrap and cook for about 3-4 minutes, drain.
- When potatoes are tender, discard bay leaves.
- With a hand held immersion blender, puree the ingredients in the pot.
- Thin with water if necessary. Return to simmer.
- Stir in broccoli and season to taste.
- Add cheese to soup and stir until melted.
- Ladle into bowls and top with croutons if needed.
