Ingredients
  • ¼ c. olive oil
  • 1 large Vidalia onion, finely chopped
  • 3 celery stalks, finely chopped
  • 2 c. chicken broth
  • 2 c. half and half
  • 2 c. water
  • 1 lb. Yukon gold or russet potatoes, peeled and chopped
  • 1 lb. yams, peeled and chopped
  • 2 bay leaves
  • Kosher salt, black pepper
  • 2 c. fresh chopped broccoli florets
  • 1 ½ c. shredded sharp cheddar cheese
  • Croutons, for topping, optional
Instructions
  1. Heat olive oil in large pot over medium heat.
  2. Add onion and celery and cook until soft, stirring occasionally.
  3. Add broth, half and half, all potatoes, bay leaves, water, 1 t. salt, 1 t. pepper. Bring to a boil.
  4. Reduce heat to low and simmer until potatoes are tender.
  5. Meanwhile, place broccoli in microwave safe bowl, add 3 T. water and season with salt.
  6. Cover with plastic wrap and cook for about 3-4 minutes, drain.
  7. When potatoes are tender, discard bay leaves.
  8. With a hand held immersion blender, puree the ingredients in the pot.
  9. Thin with water if necessary. Return to simmer.
  10. Stir in broccoli and season to taste.
  11. Add cheese to soup and stir until melted.
  12. Ladle into bowls and top with croutons if needed.
