Cheesy Black Bean Salsa and Chicken Burritos
Ingredients
- 1 (15-oz.) can black beans, rinsed and drained
- 3 chopped green onions
- 2 T. lime juice
- ½ t. ground cumin
- Salt, black pepper
- 4-6 boneless, skinless chicken breasts
- ½ t. chili powder
- 8 oz. grated pepper Jack cheese, or your favorite
- 1-2 fresh jalapenos, seeded and minced
- 4-6 (9”) whole wheat flour tortillas
Instructions
- Preheat grill or broiler.
- In bowl, combine beans, green onions, jalapenos, lime juice, cumin, salt and pepper.
- Rub the chicken breasts with chili powder, salt and pepper. You can do this a day before if you like it to marinade a bit.
- Cook chicken over moderate heat for 5-6 minutes. Turn and cook until brown and just done, about another 5-6 minutes (depending on thickness of the breast.)
- Remove chicken and let rest for a few minutes and then slice.
- Heat oven to 350.
- Put ¼ of the cheese in a line near one edge of the tortillas. Top cheese with ¼ of salsa and then ¼ of the chicken slices.
- Roll the tortilla and wrap each one in foil.
- Bake until cheese melts, 12-15 minutes.
