Caramelized Onion and Sweet Potato Salad
Ingredients
- Olive oil
- 3 red onions, thinly sliced
- 1 T. Dijon mustard
- ¼ c. balsamic vinegar
- 1 T. honey
- 1 T. finely chopped lemon or orange zest
- 1 T. finely chopped fresh thyme
- 2-4 sweet potatoes, sliced into ½” slices
- Canola oil
- Salt and black pepper
- 1 t. dried cumin
Instructions
- Heat some olive oil in bottom of a heavy skillet, just enough to cover the bottom.
- Saute the onions until golden.
- Add mustard and vinegar and cook for another 1-2 minutes.
- Remove from the heat and add honey, zest and thyme. Stir to combine. Let cool.
- Preheat grill. Brush potato slices with canola oil and season with salt, black pepper and cumin.
- Grill on each side for 3-5 minutes or until just cooked through.
- Place potatoes in bowl and fold in the onion mixture.
- Season to taste and serve.
