BROWNIE ICE CREAM SANDWICHES
Ingredients
- 1 c. flour
- ¼ t. baking soda
- ¼ t. salt
- ¼ c. butter
- 1 ½ c. semi-sweet chocolate chips
- ⅔ sugar
- 2 eggs
- 1 t. vanilla
- 1 qt. your favorite ice cream flavor
- Assorted toppings: chopped nuts, sprinkles, chocolate morsels, chopped candies, etc.
Instructions
- Preheat oven 325. Spray ice cream sandwich pan with PAM.
- In bowl, combine flour, baking soda and salt.
- In large microwavable safe bowl, melt butter and chocolate chips.
- Whisk in sugar, eggs and vanilla. Beat well.
- Add flour mixtures, stir until just combined.
- Spoon 2 T. of batter into each pan cavity, spreading evenly.
- Bake 8-10 minutes or until inserted toothpick angled to center comes out clean.
- Immediately unmold brownies onto cooling rack, cool completely.
- Scoop about ¼ c. ice cream onto smooth side of half of brownies.
- Top with remaining brownie, pressing gently.
- Roll edge of sandwiches in assorted toppings.
- Wrap in saran wrap and freeze immediately.
Notes
*****This does require an actual Ice Cream Sandwich Pan. I have also used boxed brownie mix when in a hurry and after baking and letting it cool, I use a circular cutter like a biscuit cutter or cookie cutter to make my rounds. You have to do about 3-4 boxes of bought brownie mix to get large enough flat brownies to cut.
