Broccoli Stir Fry
Ingredients
- 2 lbs. fresh broccoli
- 2 T. olive oil
- 1 T. dark sesame oil
- 1 of each color bell pepper (green, red, yellow, orange), cut into strips
- 1 red onion, cut into thin wedges
- 1 T. minced garlic
- ¼ c. soy sauce
- ¼ c. canned beef or chicken broth
- 1 ½ T. dark brown sugar
- 2 T. red wine vinegar
- 1 T. light sesame oil
- 2 t. cornstarch
- 1 ½ t. minced fresh ginger root
- 1 T. Tabasco
- 1 (8-oz.) can water chestnuts, drained
- ¼ c. pine nuts, toasted
Instructions
- Trim off large leaves of broccoli and remove tough ends of lower stalks. Wash and coarsely chop stalks and flowers.
- Heat olive oil and dark sesame oil in wok or large non-stick skillet at medium-high (325) for 2 minutes.
- Add broccoli, bell peppers, onion and garlic. Stir fry 4-5 minutes or until broccoli is crisp-tender. Remove from wok.
- Combine soy sauce and next 7 ingredients. Stir well. Add to wok and cook, stirring constantly, just until thickened.
- Return broccoli mixture to wok and stir fry until thoroughly heated and coated.
- Stir in water chestnuts. Sprinkle with toasted pine nuts before serving.
Notes
*****Serve over nice hot rice. You can add cooked chicken, beef or seafood to add more to the dish.
