Ingredients
  • 2 lbs. fresh broccoli
  • 2 T. olive oil
  • 1 T. dark sesame oil
  • 1 of each color bell pepper (green, red, yellow, orange), cut into strips
  • 1 red onion, cut into thin wedges
  • 1 T. minced garlic
  • ¼ c. soy sauce
  • ¼ c. canned beef or chicken broth
  • 1 ½ T. dark brown sugar
  • 2 T. red wine vinegar
  • 1 T. light sesame oil
  • 2 t. cornstarch
  • 1 ½ t. minced fresh ginger root
  • 1 T. Tabasco
  • 1 (8-oz.) can water chestnuts, drained
  • ¼ c. pine nuts, toasted
Instructions
  1. Trim off large leaves of broccoli and remove tough ends of lower stalks. Wash and coarsely chop stalks and flowers.
  2. Heat olive oil and dark sesame oil in wok or large non-stick skillet at medium-high (325) for 2 minutes.
  3. Add broccoli, bell peppers, onion and garlic. Stir fry 4-5 minutes or until broccoli is crisp-tender. Remove from wok.
  4. Combine soy sauce and next 7 ingredients. Stir well. Add to wok and cook, stirring constantly, just until thickened.
  5. Return broccoli mixture to wok and stir fry until thoroughly heated and coated.
  6. Stir in water chestnuts. Sprinkle with toasted pine nuts before serving.
Notes
*****Serve over nice hot rice. You can add cooked chicken, beef or seafood to add more to the dish.
