Ingredients
  • 1 (17.3-oz.) pkg. frozen puff pastry
  • ¼ c. apricot jam
  • 1 (13.2-oz.) round Brie cheese
  • 1 large egg
  • 1 T. water
  • Apple slices
  • 2 dried cranberries or raisins
Instructions
  1. Preheat oven 400.
  2. Unfold one sheet of puff pastry.
  3. On lightly floured surface, roll pastry into a 14” square. Cut off corners to make a circle.
  4. Spread jam into a 4 ½” circle in center of pastry.
  5. Place Brie on top.
  6. Fold pastry over cheese and pinch edges to seal.
  7. Beat egg and water. Brush over pastry.
  8. Place on ungreased baking sheet, seam side down.
  9. Roll the remaining pastry into a 14” square.
  10. Cut four 1” strips. Cut strips in half crosswise.
  11. Layer strips over brie. Save remaining pastry for another use.
  12. Bake 20-25 minutes or until golden brown.
  13. For eyes, cut two circles from apple slices. Place on top of Brie.
  14. Top each circle with a dried cranberry or raisin.
  15. Serve warm with apple slices.
