Ingredients
- 4 seafood stuffed catfish or fish of choice (season)
- 1- red onion thinly sliced
- 1 of each red yellow orange green bell pepper sliced
- 1 carton sliced mushrooms ( I like baby portabellas- they stay firmer)
- 1 lb medium shrimp, seasoned
- Fresh pick de gallo sauce
- Fresh lemon
- Olive oil
Instructions
- Take your baking dish and layer your veggies in bottom. Season with salt red/black pepper and garlic powder. Drizzle olive oil. Mix with your hands and spread in pan
- Place seasoned shrimp on top
- Place season fish on top of this
- Evenly spread pico de gallo on top fish
- Place sliced lemon on top
- Seal with foil. Bake 375 for 35-45 minutes. U can remove foil for last 10 minutes to make golden brown. I buy my catfish already stuffed at Benny’s Grocery Store. I am sure you can find a place that stuffs fish in your place of shopping.
- When ready to serve u can boil your favorite pasta and mix with the bottom layer of fish (veggies and shrimp). This can be your side dish along with lemon pesto green beans
- Add your favorite bread and salad

*****extra tip- if u decide not to do pasta thing save that shrimp/veggie mixture and on another day add to orzo pasta with added snow peas or favorite veggie. Sprinkle with fresh Parmesan cheese and serve with grilled chicken breasts This can go on forever so I will stop here. My kids said don't overwhelm everyone 🙂
