Baked Eggs Nestled with Sausage and Potatoes
Ingredients
- 2 lbs. medium Yukon God potatoes
- 1 ½ lbs. Cajun style bulk sausage (if in casing, remove from casing)
- 1 large Vidalia onion, finely chopped
- 2 T. extra virgin olive oil
- Salt and fresh black pepper
- 8 large eggs
- Favorite breakfast toast, biscuits, etc. to serve with dish
- Tabasco to taste
Instructions
- Preheat oven 375. Place potatoes in pot and cover with cold water. Bring to boil and then reduce heat and cook until potatoes are completely tender. Drain and let cool. When cool enough to handle, peel and cut into ¾” pieces.
- In a 12” iron skillet, add sausage, break into chunks and cook until done and lightly browned. Add chopped onion and cook until soft. Drain on paper towels and wipe out excess oil from skillet.
- Heat olive oil in skillet, add potatoes and season to taste. Cook, turning occasionally until potatoes are golden and crispy. Stir in sausage mixture. Remove skillet from heat.
- Using the bowl of a ladle, make 8 indentions into potato-sausage mixture. Crack an egg into each hole.
- Place skillet into oven and bake for 12 minutes or until egg whites are set but yolks still runny.
- To serve, spoon an egg and surrounding potato/sausage mixture onto plate. Serve with favorite hot bread and add Tabasco for kicked up spice.
