Alice's Marinated Mozzarella and Bruschetta
Ingredients
- 1 lb. firm Sweet Campari Tomatoes or something similar
- ½ red onion, minced
- ½ c. torn fresh basil leaves
- Sea salt, black pepper
- Extra virgin olive oil
- Balsamic vinegar
- Good, fresh mozzarella, cut into slices (use the amount you would need to serve)
- 1 bottle Wishbone Red Wine Vinaigrette
Instructions
- Take your mozzarella and slice fairly thin and place into a shallow dish.
- Cover the cheese with the vinaigrette (you can use your favorite type dressing).
- Cover and chill at least 8 hours or overnite.
- Dice tomatoes and let drain. Try to get off as much liquid as you can.
- Place tomatoes in a bowl with the onion and basil leaves.
- Season with salt and pepper.
- Drizzle with olive oil and generously sprinkle with the balsamic vinegar. Taste for seasoning. Cover and refrigerate until ready to serve.
- To serve: Place the tomato mixture and the mozzarella cheese on a serving platter and surround with bread or crackers. Place some of the mozzarella on top of bread/cracker and then top with the tomato mixture!
Notes
*****If I have any leftover tomato mixture I just add it to salads or sauces or veggies. The leftover mozzarella can also be used in any dishes where you would add cheese.
