Alice's Mardi Gras Salad
Ingredients
- 1 large red onion, thinly sliced
- 1 large Vidalia onion, thinly sliced
- 1 bottle Wishbone Balsamic Dressing
- Salt, black pepper
- 1-2 (16-oz.) package of Brunetta (Brown Gourmet Tomatoes)-depending on how big your salad or serving dish is. These tomatoes are actually purple looking.
- 2-3 large cucumbers, unpeeled, cut in half, then sliced or 2 packages of the mini gourmet cucumbers
- 1-2 containers yellow cherry tomatoes
Instructions
- The day before you are serving salad, take the sliced onions and place in a baggie and season with salt and pepper.
- Pour enough balsamic dressing to coat all the onions. Seal bag and toss it around to mix the dressing with the onions. Refrigerate overnight.
- To prepare salad: Place the marinated onions in a colander and drain but save the dressing.
- Place the onions in the center of a large shallow serving platter.
- Slice the Brunetta tomatoes and place around the outer edge of platter. Sprinkle with salt and pepper.
- Place the sliced cucumbers in the center of the platter on top of the onions. Season with salt and pepper.
- Slice the yellow tomatoes and place between the cucumbers and Brunetta tomatoes and make a ring. Season with salt and pepper.
- Refrigerate until ready to serve. When ready to serve, pour the remaining marinade dressing all over the veggies. Serve.
