Turkey Fajita Wraps (Crock Pot)
Ingredients
- 2 c. picante sauce
- 1 large green bell pepper, cut into strips
- 1 large red bell pepper, cut into strips
- 2 c. fresh shucked corn or frozen corn, thawed
- 1 can black beans, rinsed and drained
- 1 T. chili powder
- 1 T. cumin
- 3 T. lime juice
- 3 T. minced garlic
- 2 lbs. turkey breast cutlets, cut into 4” long strips
- 16 whole wheat flour tortillas (8”), warmed
- Shredded Mexican blend cheese
- Sliced avocado, salsa, sour cream, optional
Instructions
- Mix the picante sauce, bell pepper, corn, beans, chili powder, cumin, lime juice, garlic and turkey into a 4 quart crock pot/slow cooker.
- Cover and cook on LOW for 6-7 hours or 3 to 4 hours on HIGH or until turkey is cooked through.
- Spoon about ½ c. of filling down center of each tortilla. Top with cheese and other desired toppings. Fold tortillas around filling.
