Cucumber and Feta Greek Salad
Ingredients
  • 2-4 cucumbers (if you can get the seedless or hothouse, these are nice, but any type will do)
  • Sea salt
  • 1 c. good quality crumbled feta cheese
  • 3 T. chopped fresh oregano leaves
  • 1 T. minced garlic
  • 1 shallot, minced
  • Zest and juice of 3 lemons
  • ⅓ c. balsamic vinegar
  • 2-4 oz. extra virgin olive oil
  • Fresh black pepper
Instructions
  1. Slice cucumbers as thinly as possible. If you have a mandolin or vegetable slicer that works well.
  2. Place cucumbers in a mesh strainer with a good amount of salt. This will help draw out the excess liquid.
  3. In a bowl, combine the feta, oregano, garlic and shallot.
  4. Add the zest and lemon juice and vinegar.
  5. Whisk in the amount of oil you desire.
  6. Drain off excess liquid from cucumbers. Add the cucumbers to the dressing mixture.
  7. Taste for seasoning. Serve.
Notes
*****You can use the standard Greek Salad Vinaigrette listed below instead of the above dressing.
