Cucumber and Feta Greek Salad
Ingredients
- 2-4 cucumbers (if you can get the seedless or hothouse, these are nice, but any type will do)
- Sea salt
- 1 c. good quality crumbled feta cheese
- 3 T. chopped fresh oregano leaves
- 1 T. minced garlic
- 1 shallot, minced
- Zest and juice of 3 lemons
- ⅓ c. balsamic vinegar
- 2-4 oz. extra virgin olive oil
- Fresh black pepper
Instructions
- Slice cucumbers as thinly as possible. If you have a mandolin or vegetable slicer that works well.
- Place cucumbers in a mesh strainer with a good amount of salt. This will help draw out the excess liquid.
- In a bowl, combine the feta, oregano, garlic and shallot.
- Add the zest and lemon juice and vinegar.
- Whisk in the amount of oil you desire.
- Drain off excess liquid from cucumbers. Add the cucumbers to the dressing mixture.
- Taste for seasoning. Serve.
Notes
*****You can use the standard Greek Salad Vinaigrette listed below instead of the above dressing.

GREEK SALAD VINAIGRETTE
Ingredients
- 3 T. minced garlic
- 2 t. dried oregano
- 1 t. Dijon mustard
- ¼ c. good quality red wine vinegar
- Juice of 1 fresh lemon
- Zest of 1 lemon
- Kosher salt, Fresh ground black pepper
- ½ c. extra virgin olive oil
Instructions
- In a bowl, whisk together the garlic, oregano, mustard, vinegar, lemon juice and zest.
- Taste for seasoning-add salt and pepper.
- Still whisking, slowly add the olive oil to make an emulsion.
- Store in container in refrigerator
Notes
*****If using right away, pour over the veggies used in your Greek Salad and add the feta and olives.
