Ingredients
  • 2 oz. olive oil
  • ¼ c. diced red onion
  • 2 T. diced bell pepper, each color (red, yellow, orange, green)
  • 1 T. minced jalapeno, seeded
  • 2 T. minced garlic
  • 4 oz. black beans, drained and rinsed
  • 4 oz. chickpeas, drained and rinsed
  • 4 oz. white beans, drained and rinsed
  • 6 oz. rolled oats
  • 1 t. good paprika
  • 1 t. chili powder
  • 1 t. dried oregano
  • 1 t. dried basil
  • 2 T. minced fresh parsley
  • 1 t. red chili flakes
  • 1 t. ground cumin
  • 1 t. celery salt
  • 2 T. seasoned bread crumbs
  • 1 egg
  • Black pepper and salt
Instructions
  1. In a saute pan, add 1 oz. of olive oil and all raw veggies except beans. Saute until transparent. Remove from heat and cool.
  2. Add veggies to beans and mix thoroughly.
  3. Add all the dry ingredients along with the egg.
  4. Thoroughly mix and form into 4 regular patties or desired size you want.
  5. Cover and refrigerate for 1 hour.
  6. In saute pan, add remaining olive oil and cook patties, about 2-4 minutes per side.
  7. Serve with your favorite bread and toppings.
