Spicy Roasted Chickpeas
Ingredients
- 2 (15-oz.) cans chickpeas, rinsed, drained and patted dry
- 2 T. extra virgin olive oil
- 2 t. ground cumin
- 1 t. ground coriander
- 1 t. chile powder
- 1-2 t. red pepper
- Kosher salt
Instructions
- Preheat oven 400.
- In a bowl, toss the peas with all of the above ingredients. If you like them spicy, add more red pepper or even Tabasco.
- Spread the peas on a rimmed baking sheet that has been lined with foil and spray with PAM.
- Roast for 30 minutes or until slightly crisp and golden brown.
- Serve warm or at room temperature.
- Store in airtight container or freeze in Ziploc bags.
