Snappy Snip Fries

SNAPPY SNIP FRIES
2 lbs. parsnips, peeled and cut into 3 ½” strips
2 T. olive oil
1 t. kosher salt
1 t. pepper
1 t. garlic powder
½ c. grated parmesan cheese
¼ c. fresh parsley, chopped

  1. Position oven rack to upper third position.
  2. Preheat oven 425.
  3. Lightly coat large baking sheet with PAM.
  4. Place parsnips in large bowl.
  5. Toss parsnips with olive oil, salt, pepper and garlic powder.
  6. Spread on baking sheet in single layer.
  7. Roast for 15 minutes.
  8. Flip fries and roast until golden brown and tender, 10-15 minutes.
  9. Sprinkle ½ of parmesan over fries and roast until cheese melt, 1-2 minutes.
  10. Let fries rest 2 minutes.
  11. Toss parsnips with remaining parmesan and parsley.
    *Use your favorite dipping sauce.
