Southern Cracklin Cornbread
Ingredients
- ¼ c. butter
- 2 c. self-rising cornmeal
- ½ c. flour
- 2 ½ c. buttermilk
- 2 large eggs, lightly beaten
- 1 c. cracklings
Instructions
- Place butter in 9” cast-iron skillet and heat in 425 oven for 5 minutes.
- In a large bowl, combine cornmeal and flour, making a well in center.
- Stir together buttermilk, eggs and cracklings.
- Add dry ingredients, stirring just until moistened.
- Pour over melted butter in hot skillet.
- Bake for 25-30 minutes or until golden brown.
Notes
*****If you live in an area where cracklings are not available, you can substitute 1 c. cooked and crumbled bacon.
