Megan's Spicy Crockpot Pork Roast
Ingredients
- 3-5 lb. boneless pork roast or loin, seasoned and stuffed
- 1 (7-oz.) can adobe sauce with chipotle peppers***
- 1 (10-oz.) can Rotel
- 1 (4-oz.) can diced green chilies
- 1 (8-oz.) sliced mushrooms
- 2 onions, sliced
- 2 T. minced garlic
- 1 c. white wine
- Olive oil
Instructions
- In a large pot, drizzle olive oil in bottom and heat over medium heat.
- Sear the roast on all sides. Remove and place on platter.
- In same pot, saute onions and add garlic in last 2 minutes.
- In crock pot, add the onions/garlic mixture, mushrooms, adobe sauce, Rotel, green chilies and wine.
- Mix well.
- Place roast on top of mixture in crock pot.
- Spoon sauce over roast.
- Cook on HIGH for 4 hours.
- Then cook on LOW for 1 hour.
- You can remove roast and thicken gravy if you like.
Notes
*****The ADOBE SAUCE WITH PEPPERS is very spicy. If you can find the plain ADOBE SAUCE without peppers, use for less spicy.
This roast does well in shredding to make great sandwiches. A nice slaw served on the sandwich cuts the spiciness of the gravy. Excellent roast to serve hungry crowds or plenty to freeze. This recipe comes from one of my best friend’s daughter-in-law, MEGAN GLOWACKI!
