Smokey Potato Salad
Ingredients
- 4-6 medium red potatoes
- Extra virgin olive oil
- 1 bunch chopped fresh parsley
- 1 bunch chopped chives
- 1 T. minced garlic
- 1 T. lemon zest
- 2 T. fresh lemon juice
- Salt, black pepper
- 1 medium jar, diced pimento, drained, optional garnish
Instructions
- Preheat grill. Boil potatoes in salted water until almost tender, do not overcook.
- Drain potatoes and place in bowl of ice water to stop the cooking.
- Slice the cooled potatoes into ½” rounds.
- Brush both sides of potatoes with olive oil and season.
- Place on hot grill until grill marks form on each side.
- In bowl, mix together 3 T. olive oil, parsley, chives, garlic, zest and juice.
- To serve, shingle the potatoes so that one piece overlaps the next.
- Sprinkle with a little more salt and pepper if needed.
- Generously spoon the herbs over the top. Serve.
- For added color, top the herbs with the diced pimento.
