Ingredients
  • 1 ear of fresh yellow corn
  • 1 (8.5-oz.) box corn muffin mix
  • 1 egg
  • ⅓ c. milk
  • 1c. grated sharp cheddar cheese
  • 4 hot dogs, each cut into 6 (1”) pieces
  • Pam
  • Catsup, mustard, relish-condiments
Instructions
  1. Preheat oven 375.
  2. Remove the corn kernels from cob and place in a bowl.
  3. In another mixing bowl, combine the muffin mix, egg and milk. Batter will be lumpy but mix well.
  4. Add the corn, cheese and mix into the muffin mixture.
  5. Let batter sit for 5 minutes.
  6. Grease or spray Pam into 24 mini cup muffin pan.
  7. Put about 1 T. of batter into each cup.
  8. Place a single hot dog piece into center of batter, standing straight up.
  9. Bake for 12-15 minutes or until cooked through.
  10. Remove from oven and let rest 5 minutes.
  11. Remove and place on platter and serve with your favorite condiments.
