Ingredients
  • 2 large sweet or Vidalia onions
  • 1 c. self-rising flour
  • ½ c. self-rising cornmeal
  • 1 large egg, lightly beaten
  • ½ c. sweetened condensed milk
  • ¼ c. club soda
  • ⅓ c. minced jalapeno pepper
  • Vegetable oil
  • Salt
Instructions
  1. Cut onions into ¼” thick slices and separate into rings.
  2. Combine flour and cornmeal in a bowl.
  3. Combine egg, milk, and club soda in a bowl.
  4. Add the liquid mixture to the dry ingredients. Add the jalapeno peppers.
  5. Pour oil to 3” depth in heavy Dutch oven and heat to 375.
  6. Dip onion rings into batter, coating well. Fry a few at a time, until golden brown.
  7. Drain on paper towels. Sprinkle with salt. Serve immediately with catsup or ranch/blue cheese dressing.
