Wonderful Artichoke Balls
Ingredients
- 3 garlic cloves, pressed or minced
- Olive oil
- 1 (14-oz.) can artichoke hearts, drained and mashed or pureed
- 2 eggs, lightly beaten
- ¾ c. grated parmesan cheese
- ¾ c. Italian seasoned bread crumbs
- Vegetable oil
- Marinara sauce, home-made or store bought
Instructions
- Preheat oven 350.
- In large frying pan over medium heat, coat bottom with olive oil.
- Saute garlic for 1-2 minutes, do not burn.
- Reduce heat to low, add artichokes and eggs, stirring constantly for 5 minutes.
- Remove from heat, stir in half cheese and half bread crumbs.
- Mix well.
- When cool enough to handle, roll into 1” balls.
- Combine remaining cheese and bread crumbs in shallow dish.
- Roll balls into this dish to coat.
- Pour oil to a depth of 3” in Dutch oven pot. Heat to 375 over high heat.
- Carefully add balls and fry until browned, 3-5 minutes.
- Serve hot or cold with marinara sauce.
- Makes about 3 dozen.
Notes
*****You can also place on baking sheet sprayed with PAM and bake the balls at 350 for 5-8 minutes for a healthier version.
