Frozen Peanut Butter Balls
Ingredients
  • 1 (18-oz.) jar creamy or crunchy peanut butter (I like to make both.)
  • 2 ½ c. powdered sugar
  • 1 t. vanilla extract or almond extract
  • 8 oz. of semi-sweet chocolate, chopped
Instructions
  1. In a bowl, combine the peanut butter with sugar. With an electric mixer, beat until smooth and stiff.
  2. Beat in the vanilla or almond extract.
  3. Shape the mixture into 1” balls. This should make about 2 dozen balls.
  4. Place on wax paper and place in the freezer for at least 1 hour.
  5. Place the chocolate in a double boiler or a small bowl over simmering hot water. Stir to melt it. Remove chocolate from heat.
  6. I use fondue forks (2) and gently set the ball into the chocolate only half way. Let excess chocolate drip off. Lay on waxed lined sheet tray.
  7. You can take the forks and make drizzle marks on the side that is not done in chocolate.
  8. Place in refrigerator until chocolate is set.
  9. Once set, you can place in Ziploc bags and freeze.
