Ingredients
  • 4-6 zucchini (need about 8 cups), julienne
  • 1 T. kosher salt
  • 6 green onions, sliced on bias
  • ¼ c. chopped fresh parsley
  • 3 T. chopped fresh mint
  • 1 T. minced fresh oregano
  • Zest of 1 lemon
  • ¼ c. extra-virgin olive oil
  • 3 T. fresh lemon juice
  • Salt, black pepper
  • Shaved pecorino
Instructions
  1. Julienne the zucchini, omitting the seeded area. Then cut the strips crosswise, for easier eating.
  2. Toss zucchini with kosher salt and let sit in colander to drain excess liquid, about 30 minutes.
  3. Transfer to salad spinner and take out as much liquid as possible. You can also place in dish towel and twist the towel to squeeze out the liquid.
  4. Place zucchini in bowl.
  5. Add green onions, parsley, mint, oregano and zest.
  6. Whisk together oil and lemon juice. Season with salt and pepper.
  7. Pour over slaw.
  8. Toss slaw and top with pecorino.
