Lemony Herb Vinaigrette Green Beans with Onions, Peppers and Tomatoes
Ingredients
- 2 (12-oz.) pkgs. Green Giant Fresh “Steamer” Green Beans
- ½ c. Wishbone “Roasted Red Bell Pepper” Dressing (or any vinaigrette you may like)
- ¼ c. fresh lemon juice plus 1-2 T.
- Olive oil
- Kosher salt/black pepper/garlic powder
- ½ red onion, thinly sliced
- 4 mini sweet bell peppers (assorted colors, if you can), sliced
- 4-6 garlic cloves, sliced
- 1 carton cherry tomatoes, halved
Instructions
- Cook beans according to package instructions and place in serving dish.
- In a small skillet, drizzle with olive oil and saute the red onions, bell peppers, and garlic until soft. Season with salt and pepper and drizzle with 1-2 T. lemon juice.
- Mix the dressing and lemon juice.
- Pour the dressing over the beans and season with salt, black pepper and garlic powder to taste. Mix well.
- Place the sautéed veggies down the center of the green beans.
- Place the cherry tomatoes across the top of the sautéed veggies.
- When ready to serve, place in 325 oven until hot.
