Flavorful Green Beans with Bacon and Tomatoes
Ingredients
- ¼-1/2 c. extra virgin olive oil
- ½ lb. hickory smoked slab bacon, sliced ⅓” thick and cut into 1” matchstick size
- 1 large Vidalia onion, diced
- 4 T. minced garlic
- 3 lbs. fresh green beans, trimmed
- 1 t. crushed red pepper flakes
- 1 (35-oz.) can peeled Italian tomatoes, drained and chopped
- 2 c. chicken broth
- 2 bay leaves
- Salt, black pepper
Instructions
- In large cast-iron casserole pot, heat olive oil.
- Add bacon and stirring and cook until crisp. With slotted spoon, transfer bacon to plate.
- To the bacon oil, add onion and garlic and cook until soft.
- Add green beans and crushed red pepper and cook, tossing until beans are coated with bacon fat and just begin to soften.
- Add the tomatoes, broth, bay leaves, crisp bacon. Season and bring to a boil.
- Reduce heat to moderately low, cover partially and cook, stirring occasionally, until beans are tender, about 15-20 minutes.
- With slotted spoon, transfer beans to large bowl.
- Boil the remaining liquid over high heat and reduce by half, about 12-15 minutes.
- Return beans to reduced liquid and heat through.
- Transfer to serving bowl, discard bay leaves. Serve warm or at room temperature.
